Soup Night: Perfect for drop-in company
Sweet Potato Minestrone [December 15, 2003]
Here is a great soup to kick off your first soup night. It’s simple and delicious. Provide bowls and spoons and you have a wonderful, warm way to welcome your neighbors for an evening of sharing each other’s company.
½ lb. smoked turkey sausage, cut into thin slices
1 cup onion, diced
1 cup carrot, diced
¾ cup thinly sliced celery (optional)
3 cups water
2 cups peeled and diced sweet potato
1 tsp. dried oregano
½ tsp. ground black pepper
¼ tsp. salt
2 (14.5 oz) cans diced tomatoes, undrained
1 (15 oz.) can great northern beans, rinsed and drained
8 cups chopped fresh spinach
Combine the first 4 ingredients in a Dutch oven over medium-high heat; sauté until sausage is browned. Add water and the next 6 ingredients. Bring to a boil; cover, reduce heat. Simmer for 30 minutes or until vegetables are tender. Stir in spinach; cook for 2 minutes and serve.
Makes approximately 7 servings. May be doubled.
